Onion Bacon Gratin Recipe

So when you get invited back to your old office for a cookout on short notice, what's a guy to make and bring? Well believe it or not, I looked at what I had on hand, headed to Pinterest  and a search in onion recipes quickly had me ready to make this cheesy bacon onion gratin from Cinnamon Spice and Everything Nice.

I assembled the ingredients and fried up some bacon.

Roasted the onions and I will make one note here from the original recipe — it recommends 30 minutes into roasting to remove and drain the oil. I would suggest doing this both at the 30 minute mark and at the hour mark before adding the cream sauce.

Make and add the cream sauce, cheese, and bacon.

Once assembled return to the oven for 25 minutes.

Allow to cool 5-10 minutes after removing from the oven.

This is certainly a "once a year" kind of decadent dish! I adapted the original recipe to serve more, so 4 onions, 1 cup of cheese, 4 slices of bacon and 2 cups of heavy cream. Enjoy!
