EAT The Whole Pig: Pulled Pork BBQ Sandwiches with a Red Cabbage Slaw


Last I left off, we smoked a Boston butt and made barbecue with a homemade sauce. Today we're pairing it with a a red cabbage slaw on a bun to make one of the best pulled pork BBQ sandwiches I've ever had! 

Ingredients for Red Cabbage Slaw:
  • 1/2 large red cabbage, sliced into ribbons
  • 3 carrots, shaved into ribbons
  • 1/4 cup grainy dijon mustard
  • 1/2 cup mayonnaise
  • 1T caraway seeds
  • 1/4 cup apple cider vinegar
  • Salt & peper to taste
Whisk dressing ingredients until smooth and combined.


Pour the dressing on the cabbage/carrot mix. 


Toss the slaw and the dressing. It should lightly coat the vegetables, add salt and pepper to taste.


Top a generous scoop of the cabbage slaw on your barbecue bun and complete with a few dashes of homemade hot sauce.


The fresh crunch of the slaw with the warm barbecue is always a favorite of mine.
