Fried Green Tomato BLT's with Pimento Cheese

Yes, you read the title right and you probably do not want to make this a weekly staple. Trust me, you are going to want to, but probably not the best of ideas. Now I have made pimento cheese on the blog before and you can get the recipe for my version here. Make the pimento cheese the night before to allow it to set up.

Next you'll want to fry your green tomatoes and the bacon. I like to spread the pimento cheese on the tomatoes while warm so the cheese softens a little. Lay out all sandwich ingredients in order to assemble:

Assemble on toasted bread with mayonnaise, bacon, arugula (or lettuce), and salt/pepper. I also like a couple of dashes of hot sauce.

So today's dish may be less of a recipe and more like combining a couple of southern favorites to make it all come together but you need to make this — really.

Who in RVA is offering this as a lunch special anytime soon? Giddy up!

  1. This is a fantastic idea and combines almost all of my favorite things, fried tomatoes, bacon, cheese and bread...if only there was a way to get some chocolate and booze in there, every single base would be covered. Looks delicious as always.

    1. Haha! You can always throw a Resses Cup on it and wash it down with some bourbon!

  3. I make fried green tomato sandwiches quite a bit - we like pepper jack on ours - but I am definitely going to have to try it with pimento cheese. Genius.
