Easy Homemade Hummus


After making this Vegetarian Spicy Carrot Sandwich earlier this week I wanted to share how easy homemade hummus is. Seriously, if you are paying 4 to 5 dollars for a small tub of hummus — please take note.


Ingredients:
  • 1 can chickpeas or garbanzo beans, rinsed
  • 1-2 garlic cloves, according to taste
  • 1T cumin
  • 1/4 cup olive oil
  • Juice from half a lemon
  • 1T roasted pine nuts (E.A.T. secret ingredient)



Directions:
Put beans, garlic, lemon juice, cumin, and pine nuts into a food processor. Pulse a few times just to mix things together. Slowly add olive oil while pulsing a second time until ingredients are smooth and creamy. Taste, adding salt and pepper to season. Transfer hummus to a bowl and pour 1/2 a teaspoon of olive oil in the center — then sprinkle with whole pine nuts.

Enjoy as a snack with vegetables, a spread on crackers, or build your very own spicy carrot sandwich.

So please...a can of chickpeas and ingredients you already have in the pantry are all you need to double the store bought amount for around 3 dollars!

  2. Does the secret ingredient (I know, ssshh!) make up for the sesame tahini, which I've seen in "traditional" hummus, but not in this recipe?
