Eggplant Parmesan- Appetizer or Meal

The Hope Summer of Arts event series has been a wonderful experience for me. I have enjoyed teaching the students in my culinary class about my passion for food and tips navigating the kitchen. This past weekend was spent prepping and preparing for the 3rd and second to last class of the summer series.

This week's class will have an Italian focus - my personal favorite region to cook from. Pictured above you'll find a sample of Eggplant Parmesan in which I used local eggplant and basil from the E.A.T. garden.
