Cream of Asparagus Soup (Crème D'asperges)

One vegetable I look forward to every spring is asparagus. Taking several years to initially grow once grounded - it is the bamboo of spring - just not quite as obtrusive!

This asparagus recipe put together tonight from Epicurious is simple and the perfect starter for any spring meal. These beauties were of course grown in Hanover Virginia 15 miles from E.A.T..

It is spring, how are you preparing this seasonal vegetable?

  1. This is my top favorite veggie. I like to saute it in a bit of olive oil, with chopped garlic, and a pinch of salt.

  3. Prepared this Saturday night for group of 5 - compliments all around and this was a judgmental group! Realized after 1st batch to puree in blender that I needed to put a dish towel over the top of the blender and hold it down while in use. Super easy and delicious. Jinx
