Sunday Supper "Spicy Red Pork and Bean Chili"

Well Richmond received it's first snowfall last night and even though it was only a dusting while Mary and I walked Basil, I knew Chili would be the recipe and project for today's "Sunday Supper".

This chili recipe from Epicurious really delivers a satisfying aromatic mix of exotic spice and flavors. What chili recipe have you seen that calls for cumin and coffee? Incidentally, sticking with the E.A.T. local E.A.T. well theme of this blog I used Blanchard's Coffee's Dark as Dark for said coffee. Beans roasted less than 3 miles from the house and has been the morning Cup of Jo here for over a year!

Chili to me is not finished without toppings - which include: sour cream, cilantro, sliced jalapenos, sliced olives, avocado, green onions, cheese, and bacon (Wellshire dry rubbed black forest bacon from our local Wholefoods, no less). While this chili recipe requires a fair amount of prep and cooking time, the end result is unmatched.

You know you have a chili weekend coming...you know you do.

  1. Oh my, this is exactly what I need tonight. It is bitterly cold with the wind gusts here. I'll definitely put this on my 'to make' list.
