Huevos Rancheros

What a wonderful way to clean out the bread box, pantry, and fridge. Cut pitas in half so you have two round thin pieces. Quickly fry them on both sides in vegetable oil. Enough oil to float the pita and also hot enough to immediately start frying when inserted. This should take no more than a minute on each side. I fried up some chorizo sausage (casings removed from links) until crumbly.

At this point it is assemble with what you have. I applied the chorizo to the pita and topped with black beans, shredded cheese, diced red pepper, two fried eggs, sour cream, cilantro, and some hot sauce on the side.

A satisfying any day of the week brunch or meal option!
